Heat a drizzle of olive oil in a large pan. Add the onion, garlic, and parsley, and cook for about 5 minutes. Add the grated carrots and finely sliced Swiss chard. Cook for another 8-10 minutes, stirring occasionally, until softened. Stir in the tomato purée, drained pinto beans, diced tomatoes, Better Than Bouillon, and 1/2 cup water or vegetable broth. Season with salt and pepper. Simmer for 10 minutes, adding a little more liquid if needed. 2/ Prepare the ricotta sauce. In a bowl, whisk together the ricotta and milk until smooth. Season with salt and pepper. 3/ Assemble the lasagna. Spread a layer of ricotta sauce over the bottom of a baking dish. Add lasagna sheets, followed by the vegetable and tomato sauce, then sprinkle with mozzarella. Repeat the layers, finishing with ricotta sauce and a generous layer of mozzarella on top. 4/ Bake for 30-40 minutes, until the pasta is tender and the cheese is golden and bubbling. If the cheese browns too quickly, loosely cover with foil. Serve with a simple green salad. #lasagna #EasyRecipe #vegetarian #familymeals #easydinner
