I would suggest a cake scrapper that doesn’t have a handle that goes past the scraper itself. Then you don’t have to worry about it not sitting flat on the cake drum

I did a crumb coat and let it chill in the fridge for an HOUR before doing the final layer of icing. Cakes cooled overnight too. And it still slid everywhere and the layers broke too. This was for someone’s birthday too. I was so disappointed that I don’t even wanna try again

Something that drives me crazy is when I see bakers plop a huge mountain of icing on top of a cake. Then try to push it down the sides. It’s so easy to just put your icing in a piping bag and ice the sides and then smooth it.

My mom was a professional cake baker and decorator for over 45 years.. she always did a crumb coat on wedding cakes . She always used an offset spatula on the top and sides. She never used a scraper. She had beautiful sides doing it with a spatula.
