Austin, Texas has completely changed the way I look at barbecue. I was invited down to @thenedlondon to experience a little slice of Austin here in London, with two of the city’s absolute heavyweights joining forces John Bates of InterStellar BBQ and Ali Clem of la Barbecue. And I think this represents something much bigger than just an enormous tray of smoked meat. Texas barbecue is a craft. The knowledge of fire, smoke, time, temperature and produce that goes into doing this at the highest level is incredible and Austin has become one of the places pushing that craft forward. In 2024, when Michelin launched its first Texas guide, Austin picked up seven Michelin stars including stars for InterStellar BBQ and la Barbecue. Barbecue restaurants being recognised alongside some of the best restaurants in the world. After eating this, you understand why. The tray brings together peach tea glazed pork belly, pulled lamb shoulder, beef short rib, pork ribs and chopped cheese sausage, alongside Texas toast, mac & cheese, InterStellar beans and beetroot salad with la Barbecue’s USDA smoked brisket available separately. John and Ali are incredible ambassadors for their city, but the thing I came away wanting more of wasn’t just the food it was Austin itself. There’s a whole food culture behind this barbecue, and this has made me want to get on a plane to Texas and experience it properly, standing outside the smokehouses where it actually comes from. Huge thank you to @visitaustintx for inviting me down and giving me another reason to get Austin firmly onto the travel list. The InterStellar BBQ x la Barbecue residency is at The Ned in London from 3 September until 4 October. [ invite ] #bbqfood #wheretoeatinlondon #londonfoodguide
